sFlow is quite accurate. Have a look at

http://www.sflow.org/packetSamplingBasics/index.htm

to see how to calculate the accuracy of sFlow. sFlow is going to give 
you a very detailed and accurate picture as soon as the number of 
samples is high enough which will happen very, very quickly.
