I upgraded from 8.0.2 to 8.5 without losing the demo license. Used to be only major revision upgrades would exhibit the behavior described.

You just cannot upgrade with demo license...as Wes said upgrade removes demo license...this is applicable 8.0 also
Try this...install the same version as your production version, backup your production CUCM and restore the backup to the lab CUCM...you will find a fully running CUCM with the same exact DB you have in production on your test lab...active for one month :)
And you can go ahead and upgrade with the same license and it will exists with you for one month; it will be a better staging procedures for the upgrade.

I haven't looked at 8.6 yet. Are you saying the 'default' license now expires every 90 days? Will people need to buy licenses for test labs now?

You will also need a flux capacitor, which may be the difficult to come by.

It didn't before. It does now.
If you want to demo 8.6, you'll have to get an eval license good for 3 nodes, 500 dlu and 90 days.
