[cisco-voip] last number dialed from an analog fxs phone

that is going to be subject to signaling protocol:

SCCP, MGCP:
router just sends digits to call control agent.  Call control agent 
routes the call

H.323:
router parses dialed digits to determine when to route

That would be the starting point for any possible data collection.
